... the maid comes tomorrow?


           Day 22 - Kitchen Sink



So, yesterday I made some of this delicious toffee!!   A modified version of  Burnt Sugar Toffee with Chocolate and Toasted Walnuts   2 sticks of BUTTER, 3 cups of SUGAR (regular white granular, melted together in a big heavy pan over medium heat.   Watch and stir continuously... as it cooks the texture changes from wet sandy like to grainy smooth beings to darken to a nice golden brown color … and then starts to break down the butter separates and at this point you might begin to think something has gone wrong, nope its all good!    Keep cooking until it smoothes out…   

Day 21 - Delicious

Carefully (it will splatter) add 1 count (1 tablespoon for those of you want like to measure) of VANILLA then pour the gorgeous mix out onto a half sheet 13" x 18" x 1"  cookie pan lined with parchment.  Smooth it out with a spatula.  Wait 5 – 10 min and cover with semi-sweet chocolate chips ( I use about  ½ bag)   more is ok as is no chocolate  =)  Anyway, about 10 min later the chips will be all melty – gently smooth over with a spatula and let cool for about 5 hours or overnight.. 
Break into bits and store in airtight container.  
Try to restrain yourself from eating it all in one sitting - it is SO delicious!
